Brian's Lasagne

Brian in Boone gave me what turned out to be a favorite.

It's never the same, but it always turns out great.

 

Ingredients

10 oz Package Lasagne Noodles

 

1 1/4 lb Lean Ground Beef

1 Clove Garlic, Minced

1 Medium Onion, Chopped

 

1 lb Can Diced Tomatoes (2 Cups)

(2)  6 oz Cans Tomato Paste

1 Teaspoon Oregano

1 Teaspoon Basil

1 Teaspoon Salt

1/2 Teaspoon Black Pepper

1 Small Can Diced Black Olives

1/4 cup water

 

3 Cups Ricotta Cheese

1/2 Cup Grated Parmesean or Romano Cheese

1 lb Grated Mozzerella Cheese

2 Beaten Eggs

Brown ground beef.  Add diced onion and garlic and cook until tender.

Add tomatoes, tomato paste, salt, pepper, basil,oregano, and water.

 

In a large kettle bring 3 qts water and 1 Tablespoon Salt  to boil.

Add 1 Tablespoon Oil.  Add noodles 2-3 at a time.

Cook 15 minutes, stirring occasionally.   Drain, rinse under hot water.

 

Preheat oven to 350

Grease large baking dish 13 x9x2

Spoon a little sauce into dish.  Layer noodles, sauce, and cheese.

Repeat until all ingredients are used, ending with sauce and cheese.

Bake uncovered for about 45 minnutes.
