Breakfast Casserole

This recipe rules. It's good everytime.

Don't fool yourself with sausage- Use Bass Farm or Neese's.

 

Ingredients

2 Cups Water

1/2 Teaspoon Salt

1/2 Cup Uncooked 5 minute Grits (Jim Dandy)

2 Cups Shredded Sharp Cheddar Cheese

4 Eggs, Beaten

1 Cup Milk

1/2 Teaspoon Black Pepper

1 lb Hot Sausage

 

Brown sausage.  Crumble, drain on paper towel, set aside.

Bring salt & water to a boil.  Stir in grits.

Reduce heat to low and cook 4 minutes stirring occasionally. 

Combine grits and cheese in large bowl & stir until cheese melts.

Combine eggs, milk, and pepper and mix well.

Add to hot grit mixture, add sausage and stir well. 

Pour into Greased 12x8x2 pan.

Cover and refrigerate at least 4 hours.

Bake at 375 until lightly browned.
