Frozen Cucumber Slices

These are a summer treat.

 

Ingredients

3 Cups Sliced Cucumbers

1 Medium Onion, Sliced

2 Tablespoons Salt

1 1/2 Cups Sugar

3/4 Cup White Vinegar

 

Sprinkle cukes and onion with salt.  Mix well.  Let stand in refrigerator 2 hours.

Drain, but don't rinse.  About one hour before draining, mix sugar and vinegar.

Heat until sugar dissolves.  Cool.  Pour vinegar over cukes in freezer container.

Freeze.  Thaw in refrigerator.  Keep refrigerated.  Makes about 2 pints.
