Emily's Fried Chicken

Emily Foushee makes some damn good fried chicken.
Try it and you won't be disappointed!

 2 whole boneless chicken breasts cut into quarters
1 egg
1 1/2 cup milk
salt
pepper
self rising flour
vegetable oil

Pour about 3/4" to 1" oil in skillet or electric frying pan.  
Heat oil in  to 350 degrees Fahrenheit. Salt and pepper both sides of chicken.
In medium bowl mix together egg and milk.  Pour about 2 cups flour into large bowl (add more as needed).
Dip one chicken piece in milk and egg then roll in flour.  
Dip in milk and egg again then in flour.  Place in hot oil.  Repeat for all pieces.
Cook covered for 5 to 10 minutes, until bottom is golden brown.  Turn over and cook on other side.
Chicken should be firm.  Do not over cook.
Remove from pan.  You can add more salt to outside.
Ready to eat!!
For legs and thighs or breast on the bone, cook them at least 10 minutes both sides.

Mrs Kilgore's Fried Chicken

Eating at Kilgore's house was best on Fried Chicken night!
The "secret" here is the worstershire sauce makes the batter fry up golden brown.

Ingredients

Chicken - cut up
2 Cups Flour
Almost 1 Teaspoon Black Pepper
1 Teaspoon Garlic Powder
2 healthy Teaspoons Worstershire Sauce
Cup+  Water

Combine ingredients, adding water as needed.
Mix until just a little on the runny side.
Coat right before frying.

My Mother's Fried Chicken

Soak chicken pieces in milk. Put in a paper bag with 2 cups of flour and shake until coated.  Remove chicken and place on wax paper.  Leave it for 30 minutes.  This forms a seal and will look like glue.  This seals juices and keeps grease out while cooking.  Place chicken in 1" hot shortening and cook with lid over medium heat.  When the chicken is brown, turn each piece over one time.  Turning more than once makes it greasy.  Cook about 12 minutes on each side.  If you put a couple of drops of yellow food coloring in the hot shortening, it will give chicken a nice color.
