Emily's Fried Chicken

Emily Foushee makes some damn good fried chicken.
Try it and you won't be disappointed!

 2 whole boneless chicken breasts cut into quarters
1 egg
1 1/2 cup milk
salt
pepper
self rising flour
vegetable oil

Pour about 3/4" to 1" oil in skillet or electric frying pan.  
Heat oil in  to 350 degrees Fahrenheit. Salt and pepper both sides of chicken.
In medium bowl mix together egg and milk.  Pour about 2 cups flour into large bowl (add more as needed).
Dip one chicken piece in milk and egg then roll in flour.  
Dip in milk and egg again then in flour.  Place in hot oil.  Repeat for all pieces.
Cook covered for 5 to 10 minutes, until bottom is golden brown.  Turn over and cook on other side.
Chicken should be firm.  Do not over cook.
Remove from pan.  You can add more salt to outside.
Ready to eat!!
For legs and thighs or breast on the bone, cook them at least 10 minutes both sides.
