Sauce

I have yet to find the perfect Pizza Sauce, but these are a good start

Sauce 1
makes about 2 1/4 cups

1 12 oz can tomato paste
1 1/2 cups water
1 tsp oregano
1 tsp basil
1 tsp salt
1/2 tsp black pepper
1 Tbsp sugar
1/2 tsp garlic powder
1/2 tsp onion powder

Measure dry ingredients and mix together well - set aside.
In a medium sauce pan, combine tomato paste with water over
medium heat until it has a uniform consistency.
When it begins to bubble, add dry ingredients and reduce heat to Med-Low
Simmer, uncovered, 35-40 minutes until it reaches desired thickness.
Stir occasionally.  Cover & cool to room temp.
Refrigerate in airtight container.  Keeps well.

Sauce 2

1 can tomato puree
1/2 tsp salt
1/4 tsp pepper
1/4 tsp garlic powder
1/4 tsp dried basil
1/4 tsp dried oregano
1/4 tsp dried thyme

Combine ingredients in sauce pan over medium heat.
When sauce begins to bubble, lower heat and simmer for 30 minutes, stirring often.
Remove from heat and cool until ready to use.
Refrigerate leftover.

Papa John's Pizza Sauce Recipe

Crust

I have had good luck with both of these

Crust 1

 1 packet active dry yeast
1/2 teaspoon brown sugar
1 tsp salt
2 Tbsp olive oil
1 1/2 cups warm water (110 F)
3 1/3 cups all purpose flour

In a large bowl, dissolve yeast & brown sugar in warm water.
Let sit for 10 minutes.
Stir in oil and salt.  Mix in 2 1/2 cups flour.
Turn dough out on a clean, floured surface and knead until
dough is no longer sticky.  Place dough in well oiled bowl and cover.
Let sit until it doubles in size (about 1 hr).
Punch down dough and form a tight ball. Let relax for 10 min.
Roll out dough for favorite recipe.

Crust 2

1 cup flat beer
2 Tbsp butter
2 Tbsp sugar
1 tsp salt
 2 1/2 cups all purpose flour
1 packet active dry yeast

Dissolve yeast in warm beer (110F).
Add butter, salt, sugar, and flour.  Mix until dough
forms a ball.  Turn onto floured surface and knead for 2 minutes.
Place in an oiled bowl, turning to grease top.
Cover, let rise to double in size.  Punch down dough.
Allow dough to relax for a few minutes before rolling out.
