Marinades & Brine

The word "marinade" comes from the Latin Marinara - "Of the Sea". The basic premise of the marinade is to flavor and tenderize the meat before it cooks.  Usually, a marinade consists of an acid (to tenderize), herbs & spices (for flavor) and an oil (to help it stick to the meat).  Marinade recipes often work well as Mop Sauces as well. Just be sure to boil used marinade before using as a Mop.

Teriyaki Marinade
This is a simple, but effective marinade - Awesome with pork or chicken

1/2 cup Soy Sauce
2 Tbsp Sugar (or Brown Sugar)
1 Clove Crushed Garlic
1 Small Piece Ginger Root, Crushed

Combine in bowl
Marinate 4 - 8 hours in refrigerator

Lemon-Vinegar Marinade for Ribs
1 cup lemon juice
1 cup red wine vinegar
1/2 cup vegetable oil
1 TBS salt
2 TBS onion salt
2 TBS freshly ground black pepper
1 1/2 TBS celery salt
1 TBS fresh Marjoram
1 TBS fresh oregano
1 TBS fresh basil
1 TBS fresh thyme
3 TBS soy sauce
1/4 cup Worcestershire sauce
6 cloves garlic

Combine all ingredients in blender and blend well. 
Pour over ribs.  Marinate several hours or overnight.

Memphis Marinade
1/2 cup cider vinegar
1/2 cup Pepsi cola
1/4 cup Worcestershire sauce
1/4 cup liquid smoke
1/4 cup lemon juice
1/4 cup soy sauce
1/4 cup brown sugar

Combine all the ingredients in a saucepan and cook over low
heat for 4 or 5 minutes, stirring.  Great for ribs.

K.C. Beef Marinade
3/4 cup vegetable oil
3/4 cup soy sauce
1/2 cup lemon juice
1/4 cup Worcestershire sauce
1/4 cup prepared mustard
1 TBS fresh ground black pepper
1 TBS salt
2 cloves minced garlic

Blend ingredients in blender.  Marinate 24 hours in
plastic bag.  Flip occasionally.  Rinse meat and pat dry.

Brine
Brines are sort of like marinades.  They tend to balance salt and sugar,
which works its way into the meat through osmosis.  It's a good way to infuse
moisture and flavor into meat that tends to dry out as it cooks.
Brines work especially well with poultry and pork chops.

This is the Thanksgiving turkey brine I did this year with success:

2 gallons water
1 c brown sugar
1 c white sugar
2 c kosher salt
6 bay leaves
3 lemons - sliced
3 onions - sliced
6 garlic cloves - crushed
2 Tbs peppercorns

Mix water, salt, and sugars in hot water until melted.
Stir in other ingredients. Cool to refrigerator temp. 
Marinate overnight.
