A word about the
"Cheap Yellow Mustard" method...
One of the "Baron of Barbecue" Paul Kirk's tricks is to paint yellow
mustard on ribs or butts and then sprinkling rub onto the mustard. The mustard
tenderizes the meat and helps the rub form a nice "bark" on the meat as it cooks. When done, there is absolutely no trace of
yellow mustard, but the enhanced flavor is worth the effort.
Here is a Mustard
sauce that can be used to "paint" on the meat before applying the rub.
1 cup cheap yellow
mustard
1/2 cup beer
1/4 cup Texas Pete hot sauce
2 1/2 Tbsp brown sugar
1 splash Worcestershire sauce
1 tsp fresh ground black pepper
Mix well. Leftovers keep for a few weeks in the refrigerator.
